The only way you might be able to do it is just right-click on an empty space on your desktop and go to properties. Under the themes tab, the options will be there for how you can have it displayed. If XP is available you will see it here. If it is not there you can't do it. Give it a try and see what happens.

You can make windows xp look like vista or win 7... But that's not the case, I guess you want xp back. Try looking for a default windows xp theme.
If you can't find it just finish converting to vista/win7 just make sure to follow the steps.
